Hearty meat stew

Ingredients

    olive oil
  • 3
    onions, sliced
  • 4
    garlic cloves, chopped
  • 250-300

    leftover braaied chops (lamb or mutton), cut into chunks
  • 250

    beef stock
  • 5
    ml
    cornflour, mixed with 15ml water
  • salt and freshly ground pepper
  • handful of fresh parsley, chopped
  • zest of 2 lemons, grated
  • 1
    garlic clove, chopped

    polenta
  • 125
    ml
    grated mature cheddar cheese
 

Method

35-40 min
 

1. Heat the oil in a saucepan and fry the onions until soft. Add the garlic and stir-fry until fragrant.

2. Add the meat and stirfry for 5 minutes. Add the stock and cornflour paste and stir until the sauce starts to thicken.

3. Season with salt and pepper, then simmer slowly for 10 minutes.

4. Gremolata Mix the ingredients well.

5. Polenta Prepare the polenta according to the packet instructions. As soon it’s done, stir in the cheese and season with salt.

6. To serve, sprinkle the gremolata over the stew and serve with the polenta.
