Grilled corn on the cob with cilli-lime butter

    whole corn on the cob
  • 125
    g
    butter, at room temperature
  • 10
    ml
    chilli powder
  • 3
    ml
    cayenne pepper
  • Juice of 3 limes
  • Salt and freshly ground black pepper
  • 50
    g
    grated Parmesan or crumbled feta cheese
 

Method

 

Heat a grill to medium-high heat.

Grill the corn until it starts to blacken, about 3 minutes per side.

Mix together butter, chilli powder, cayenne pepper, lime juice and some salt and black pepper in a bowl until incorporated.

Rub the chilli-lime butter all over the corn.

Sprinkle with the Parmesan or feta cheese.
