French toast with raspberry mascarpone

  • FRENCH TOAST

    eggs
  • 250
    ml
    milk
  • 30
    ml
    butter
  • 4-6
    thick bread slices
  • RASPBERRY MASCARPONE
  • 250
    g
    mascarpone
  • 30
    ml
    raspberry jam
  • 125
    g
    fresh raspberries
  • TO SERVE
  • cucumber ribbons
  • extra raspberries
  • honey
 

Method

1.       FRENCH TOAST Whisk the eggs and milk together well. Heat half the butter in a non-stick pan over low heat. One by one, dip half the bread slices in the egg mixture. Fry the egg-coated bread until golden brown.

2.        Repeat with the rest of the sliced bread and egg mixture.

3.        RASPBERRY MASCARPONE Mix all the ingredients well.

4.        TO SERVE Spoon the mascarpone mixture on the toast. Garnish with cucumber ribbons and extra raspberries and drizzle honey over.
