Fiery fried prawns with tomato

Ingredients (11)

2 onion — chopped
4 garlic — cloves, chopped
5 cm fresh ginger — grated
2 red chillies — chopped
1 kg prawns — deveined
5 ml tomato paste
250 g cherry tomatoes
limes — juice only
15 ml soy sauce
5 ml brown sugar
fresh coriander — handful

Method:

1. Heat the oil in a deep pan or saucepan and brown the onions. Add the garlic, ginger and chillies and stir-fry until fragrant.

2. Add the prawns and stirfry until they’re done and have changed colour.

3. Stir in the tomato paste, tomatoes, lime juice, soy sauce and brown sugar. Stir-fry until the tomatoes burst. Add the coriander and serve.
