Doughnut biscuits topped with delicious royal icin

    6 x cake flour plus extra flour for rolling
  • 2 egg whites
  • 15

    lemon juice plus extra (for thinning)
  • 5
    ml
    vanilla essence

    icing sugar
  • food colouring of your choice
  • cake decorations (optional)
 

Method

7-10 min a batch
 

Preheat the oven to 160°C.Line two large baking sheets with baking paper and grease with non-stick spray.

1 BISCUITS

Put the butter,condensed milk, vanilla essence and sugar in the bowl of a food processor and pulse until smooth and well combined.

2 Add the flour and pulse until a thick dough forms around the paddle.Remove the dough and form into a ball. Cover in cling film and chill for at least 30 minutes or until needed.

3 Roll the dough out on a surface dusted with flour until it’s about 2-3mm thick. Use a cookie cutter to press circles of about 15cm in diameter into the dough. Press a smaller circle (2-5cm) into the centre of each larger circle so that it looks like a doughnut ring. Arrange the dough rings a few centimeters apart (the biscuits will enlarge slightly when baking) on the prepared baking sheet.

4 Bake the biscuits in batches for 7-10 minutes or until they’re straw-coloured and cooked. Let them cool down for 10 minutes on the baking sheets, then carefully transfer to wire racks to cool down completely.

5 ROYAL ICING

Beat the egg whites, lemon juice and vanilla essence in a large mixing bowl with an electric hand whisk until stiff peaks form. Sift the icing sugar over and beat for 7-10 minutes or until smooth.

6 Add a few drops of food colouring of your choice and beat until well combined. If the icing is too thick, add a little more lemon juice.

7 TO FINISH

Decorate the biscuits with the icing and any cake decorations of your choice (if using).Let the icing set for atleast an hour before serving.
