Curried mince in roti

Ingredients

    sunflower vegetable oil

    onion, chopped

    yellow pepper, diced
  • 2
    cloves garlic, crushed
  • 500

    lean beef mince
  • 410
    g
    chopped tomatoes
  • 400
    g
    curry cook-in-sauce
  • 250
    ml
    garden peas
  • 6
    store bought roti
 

Method

 

Heat oil in a frying pan, fry onion, yellow pepper and garlic, for 5 minutes.

Increase the heat, add mince and cook for 5 minutes, until browned all over.

Stir in tomatoes and curry cook-in-sauce, cook for 5 minutes.

Bring to the boil, reduce heat to a simmer and cook for 15 minutes, stirring, until most of the liquid has been absorbed.

Add peas and cook for 5 minutes.

Season to taste. Warm roti and fill with the curried mince.

Wrap with tin foil or shrink wrap before packing into lunch box.
