Chunky salsa on grilled fish

Ingredients

  • 4
    pieces each yellow tail or any firm fleshed fish
  • 10
    ml
    spice for fish
  • Salt and freshly ground black pepper to taste
  • 60
    ml
    olive oil
  • 2
    cloves garlic, crushed
  • 1
    medium onion, very finely chopped
  • 3
    large tomatoes, deseeded and finely chopped
  • 1
    lime, juiced
  • 15
    ml
    chopped fresh coriander
  • 3
    ml
    chilli powder
  • 3
    ml
    cumin
 

Method

 

For the fish; season fish with spice, salt and pepper.

Coat with olive oil and leave for 30 minutes to marinate.

Place under a grill or pan and fry lightly in a hot pan until cooked through.

For the salsa; mix all ingredients together, toss lightly and spoon generously over grilled fish.

Serve with crusty bread.
