Chocolate rolled oats bars

    g
    butter
  • 160
    ml
    brown sugar
  • 5
    ml
    vanilla essence
  • 4 x 250
    ml
    rolled oats, toasted
  • 7,5
    ml
    ground cinnamon
  • pinch of salt
  • 100
    g
    chopped dark chocolate pieces
  • 180
    ml
    chunky peanut butter
 

Method

baking: 15 min / chilling: 1 hour
 

Preheat the oven to 180°C. Line a 20cm square cake tin with baking paper and grease well with non-stick spray.

1. Heat the butter and sugar together until the sugar has melted. Add the vanilla essence then mix in the oats, cinnamon and salt.

2. Press two-thirds of the dough into the prepared cake tin.

3. Melt the chocolate and peanut butter together in the microwave, stirring every 30 seconds. Pour over the dough in the cake tin. Bake for 10 minutes or until solidified.

4. Sprinkle the rest of the oats mixture over the chocolate/peanut butter layer. Preheat the oven grill and put the cake tin under the grill for about 5 minutes or until the top has browned slightly.

5. Leave to cool completely then chill in the fridge for about 1 hour or until solid. Cut into bars or squares.
