Chocolate and orange cake

Ingredients

    small thin-skinned oranges (preferably seedless)
  • 5
    extra-large eggs
  • 5
    ml
    baking powder
  • 2
    ml
    bicarbonate of soda
  • 200
    g
    ground almonds
  • 250
    g
    caster sugar
  • 50
    g
    cocoa powder
  • GANACHE
  • 200
    g
    dark chocolate
  • 45-60
    ml
    orange juice orange zest or marmalade
 

Method

45 minutes
 

1. Preheat the oven to 180 °C. grease a ring cake tin and dust with cocoa powder.

2. Cook the oranges in water for 1½-2 hours. Drain and cool. Chop, remove the seeds but keep the rind on. Blitz in a food processor until smooth.

3. Add the remaining ingredients and blend well.

4. turn the mixture into the prepared cake tin and bake for 45 minutes or until done. Cool the cake in the tin for a while then turn out on a wire rack to cool completely.

5. Ganache heat the chocolate and juice until the chocolate has melted. leave to cool slightly and pour over the cake. Decorate with zest or marmalade.
