Chilli con carne with nachos

Ingredients (19)

1 onion — chopped
4 garlic — cloves, crushed
2-3 fresh chillies — chopped
10 ml cumin — ground
5 ml smoked paprika
5-10 ml cayenne pepper
500 g lean beef mince
30 ml tomato paste
1 tomatoes — whole, peeled
250 ml beef stock
1 baked beans in tomato sauce
5 ml sugar
10 ml white wine vinegar — white wine
salt and freshly ground black pepper
60 ml sour cream
2 spring onion — chopped
fresh coriander — handful, chopped
1 avocado — diced (optional)

Method:

1. Heat the oil in a shallow saucepan and sauté the onion, garlic and chillies until fragrant. Add the cumin, paprika and cayenne pepper and stir-fry for a minute.

2. Add the mince and cook until browned.

3. Stir in the tomato paste and canned tomatoes. Leave to simmer for a few minutes then mash the  tomatoes slightly.

4. Add the stock and simmer for 10 minutes. 5 Stir in the beans, sugar, vinegar, salt and pepper.

To serve

6. Divide the mince mixture between 4-6 dishes, spoon a little sour cream on top and sprinkle the spring onions and coriander over.

7. Top with avocado and serve with nachos.
