Ingredients

  • 8 chicken thighs or drum-sticks
  • salt and pepper
  • 250
    g
    dates
  • 1 whole garlic bulb, halved horizontally
  • 500
    ml
    tomato purée (see recipe)
  • handful of chopped fresh coriander
  • 125
    ml
    white wine (optional)
  • 16 green olives
  • 30
    ml
    capers (optional)
  • fresh coriander
  • cooked herb couscous or other starch (optional)

Preheat the oven to 180ºC.

1 Season the chicken with salt and pepper and arrange in an ovenproof dish. Add the dates and garlic.

2 Mix the tomato purée with the coriander and wine and pour over the chicken. Bake for about 30 minutes or until done, then add the olives and bake for another 15 minutes or until browned and fragrant.

3 TO SERVE
Sprinkle the capers (if using) and coriander over. Serve hot with the couscous or starch of your choice (if using).
