Ingredients

    each chopped garlic, freshly ground pepper, smoked paprika and dried oregano
  • 5
    ml
    turmeric
  • 60
    ml
    olive oil
  • 5
    ml
    balsamic vinegar
  • 4 chicken breast fillets, cubed
  • salt
  • extra-light olive oil for shallow-frying
  • short wooden skewers
  • 120

    1 bag mixed salad greens (kale, baby spinach and parsley)
  • 2 garlic cloves, crushed
  • juice and zest of 1 lemon
  • 180

    olive oil
  • 150
    g
    mixture of walnuts, toasted sunflower seeds and toasted pumpkin seeds

    roughly chopped Cape gooseberries and blueberries
 

Method

1 Marinade  

Mix the ingredients.  

2 Chicken

Put the chicken in a bowl, pour the marinade over and leave to marinate for 30 minutes.  Season with salt.

3 Fry the chicken in a little olive oil until just done.  Put each chicken cube on a skewer.

4 PESTO  

Put the greens and garlic in the bowl of a food processor and pulse until smooth. Add the lemon juice, zest and olive oil and pulse until just combined. 

5 Add the nuts and chop roughly.

6 Add the gooseberries and blueberries and mix through.

7 Serve the chicken with the pesto.
