    olive oil

    butter

    onion, chopped

    garlic cloves, chopped

    flour

    chicken stock
  • 4-6
    chicken breasts, cooked and shredded
  • 250
    ml
    plain yoghurt
  • salt and pepper

    baby spinach leaves
  • 150

    mozzarella cheese, grated
 

Method

 

Preheat the oven to 180°C.

Grease an ovenproof dish with butter.

1 Heat the oil and butter in a sauce-pan and fry the chopped onion and garlic until browned.

2 Stir in the flour and make a paste with the onion mixture.

While stirring, pour in the stock and simmer until thickened.

3 Add the chicken and yoghurt and stir until well combined.

Season with salt and pepper.

4 Spoon a layer of the chicken mixture into the prepared dish, followed by a few layers of spinach leaves.

Repeat until the dish is filled, ending with a layer of chicken.

5 Sprinkle the cheese on top and bake for 10-15 minutes.

Serve with a salad or crusty bread.
