Caramel ice cream tart

Ingredients

  • 80-125
    ml
    butter, melted
  • 200
    g
    Tennis biscuits, crushed
  • 385
    g
    caramel
  • a little milk
  • 4
    bananas, sliced
  • a few scoops of vanilla ice cream
  • frozen raspberries
 

Method

 

1. Mix the butter with the biscuit crumbs and press into the bottom of a pie tin or dish.

2. Mix the canned caramel with the milk until smooth and spread over the crust.

3. Arrange the banana on top and add scoops of ice cream. Freeze until needed. Scatter the raspberries over, slice and serve.

TIPS

  • Use ginger biscuits instead of Tennis biscuits for the crust.
  • Frozen berries, such as raspberries, look like jewels. So even if you’re serving plain ice cream and chocolate sauce for afters, the berries will add a special touch.
  • Layer the tart ingredients in glasses if you like – start with the crumb mixture, and reserve a little for sprinkling on top.
