Ingredients

    oil

    onion, sliced thinly

    stick cinnamon

    green cardamom pods, lightly crushed
  • 4
    bay leaves
  • 20

    ginger and garlic paste

    hot curry powder
  • 5

    ground turmeric

    chopped tomatoes

    kg
    lamb knucles, cubed and bones removed
  • 3
    potatoes, cubed
  • 250
    ml
    water
  • 10
    ml
    garam masala
  • salt and pepper to taste
  • 1
    loaf of white bread
  • fresh coriander leaves to garnish
 

Method

 

Heat the oil and fry onion, cinnamon stick, cardamom pods, bay leaves, ginger and garlic paste.

Add the curry powder, turmeric and tomatoes.

Cook over medium heat, stirring occasionally. Add meat and cook for about 10 minutes.

Add potatoes and water.

Cover and simmer gently, stirring occasionally, until the meat is tender and the potatoes are cooked.

Add garam masala and season with salt and pepper to taste.

Simmer for 10 minutes.

Take the loaf of bread, cut into quarters and scoop out the soft part, leaving the crust to form a “bowl”.

Spoon the curry into the half loaf and serve, garnished with coriander leaves.
