Brownie tiramisu


Brownie tiramisu

    unsalted butter
  • 200
    g
    dark chocolate, chopped
  • 120
    g
    cake wheat flour, sifted
  • 5
    ml
    baking powder
  • 350
    g
    sugar
  • 4
    large eggs
  • 250
    g
    mascarpone
  • 5
    ml
    vanilla essence
  • 125
    ml
    fresh cream
  • 50
    g
    chopped pecan nuts
 

Method

 

Preheat oven to 180°C. Grease and line a 25cm x 25cm square baking tin with greaseproof paper.

In a large bowl over simmering water melt butter and chocolate and mix until smooth.

In a separate bowl, mix together flour, baking powder and sugar, add to the chocolate and butter mixture.

Stir together well. Beat in eggs and mix to achieve a silky consistency.

Pour brownie mixture into baking tray, bake in oven for about 25 to 30 minutes.

Allow to cool in the tray, carefully transfer to a large chopping board and cut into squares.

Whisk together marscapone cheese and vanilla.

In another bowl, beat cream until stiff peaks form.

Fold whipped cream into mascarpone mixture.

Lightly toast pecan nuts.

Crumble half of brownies and divide evenly among six glasses.

Sprinkle with chopped pecan nuts.

Spoon half of mascarpone mixture over brownies, repeat layers ending with mascarpone mixture, sprinkle with pecan nuts.

Keep half of brownies to have with tea or coffee
