Broccoli and sausage pasta


BROCCOLI AND SAUSAGE PASTA

Ingredients

    ml
    olive oil
  • 1
    red onion, chopped
  • 2
    cloves garlic, crushed
  • 500
    g
    smoked chorizo sausages, sliced
  • 150
    g
    cherry tomatoes, halved
  • 300
    g
    fusilli pasta
  • 500
    g
    package frozen broccoli
  • 65
    ml
    grated Parmesan cheese
  • 5
    ml
    chilli flakes
 

Method

 

In a heavy based frying pan, heat olive oil and fry onion, garlic and sausages over medium heat until the sausages are no longer pink.

Add cherry tomatoes, heat through and set aside.

Meanwhile, bring a large pot of lightly salted water to a boil.

Cook pasta in boiling water for 8 minutes and add broccoli.

Cook for a further 3 minutes and drain in a colander.

In a large serving bowl, toss together the sausage tomato mixture with the fusilli and broccoli.

Add Parmesan, season with chilli flakes and toss lightly.

Serve immediately.

Chorizo sausages are available at the deli counter of most supermarkets.
