Broccoli and bacon salad

Ingredients

    slices of streaky bacon
  • 1
    small head broccoli, cut into bite-size pieces
  • 1
    red onion, chopped
  • 125
    ml
    sultanas
  • 45
    ml
    white vinegar
  • 30
    ml
    white sugar
  • 250
    ml
    mayonnaise
  • 250
    ml
    pumpkin or flower seeds (or a mixture)
 

Method

 

Place bacon in a large frying pan.

Cook over medium to high heat until evenly brown.

Drain fat and set aside.

Par boil broccoli in salted boiling water for 10 minutes and drain.

The broccoli must still be crisp.

In a medium bowl, combine the broccoli, onion and sultanas.

Whisk together vinegar, sugar and mayonnaise.

Pour over the broccoli mixture and toss lightly until well combined.

Refrigerate for at least two hours.

Before serving, toss salad with crumbled bacon and sprinkle with sunflower seeds.
