Breakfast burger with minted peas

Ingredients

  • PEAS
  • 500
    ml
    frozen peas
  • 30
    ml
    butter
  • 15
    ml
    lemon juice
  • 30
    ml
    chopped fresh mint
  • 2
    rounds feta cheese
  • salt and freshly ground pepper
  • BURGERS
  • 15
    ml
    olive oil
  • 4
    thin deboned Kassler chops
  • 4
    ciabatta rolls, halved horizontally and buttered
  • 30
    ml
    mayonnaise
  • 15
    ml
    butter
  • 4
    eggs salt and freshly ground pepper
 

Method

15 minutes
 

1. Peas Put the peas, butter and lemon juice in a microwave-proof bowl.  Microwave for 2 minutes on high and stir well.

2. Add the mint, mix then crumble the feta cheese over. Mix well and season with salt and freshly ground pepper. Set aside.

3. Burgers Heat the oil in a pan and fry the Kassler chops until golden brown and slightly crispy on the edges. Remove from the pan and set aside.

4. Put the ciabatta rolls, cut side down, in a pan and toast until crispy. Remove and spread mayonnaise on each half.

5. Heat the butter in the same pan and fry the eggs to your liking.

6. To serve, spoon a generous helping of peas on the bottom halves of the ciabatta rolls, followed by a chop and an egg. Season with salt and pepper, top with the remaining half rolls and serve immediately
