    cream cheese

    vanilla essence

    castor sugar

    cream, whipped
  • ASSEMBLY

    boudoir biscuits
  • TO SERVE
  • 50

    almonds, coarsely chopped
 

Method

Chilling: 30 min or overnight
 

Keep 6 glasses handy.

1. Coffee and brandy mixture: Mix the ingredients and pour into a shallow dish.

2. Filling: Beat the cream cheese with an electric beater until soft. Add the vanilla essence and castor sugar and beat until well combined. Fold in the whipped cream.

3. Assembly: Break the biscuits into shorter pieces so they’ll fit in the glasses. Dip a few biscuits at a time into the coffee mixture, making sure they soak up some of the liquid. Arrange half the biscuits in the bottom of the glasses.

4. Spoon a layer of the filling over the biscuits then add a second layer of biscuits on top.

5. Chill for at least 30 minutes or overnight.

6. To serve: Sprinkle chopped almonds over and serve.

TIP: For an ice cream version, replace the cream with softened ice cream and freeze the tiramisu for an hour or two before serving
