Berry and banana frozen yoghurt

Ingredients

  • 2
    large ripe bananas, broken into chunks
  • grated zest of 1 lemon
  • 500
    ml
    plain yoghurt
  • 45
    ml
    honey
  • 375-500
    ml
    fresh or frozen berries of your choice
  • TO SERVE
  • almond flakes
  • fresh berries of your choice
 

Method

freezing: 4 hours
 

1. Pulse the bananas in a food processor until smooth.

2. Add the lemon zest and yoghurt and pulse until well combined. Add thehoney bit by bit until sweet enough.

3. Transfer the mixture to a flat-bottom dish and freeze for an hour. Stir with a fork and freeze for another hour. Stir again with a fork.

4. Put the berries in the bowl of a food processor and pulse until smooth. Once the yoghurt mixture has been in the freezer for 2 hours, pour the berry mixture over and mix well. Freeze for another 2 hours.

5. To serve: Sprinkle almond flakes over the ice cream and serve with fresh berries.
