Beetroot salad with lime and Haloumi

    raw red or striped beetroot, peeled
  • 1
    small red cabbage
  • 1
    red onion
  • 1
    red apple
  • 4
    spring onions, chopped
  • 30

    watercress or a handful of spinach
  • DRESSING
  • juice of 2 limes
  • 30
    ml
    olive oil
  • 15
    ml
    honey
  • salt and freshly ground pepper
  • HALOUMI
  • 150
    g
    haloumi cheese
  • 15
    ml
    l butter
 

Method

5-10 minutes
 

1. Thinly slice or julienne the beetroot and transfer to a mixing bowl.

2. Shred the red cabbage and slice the red onion. Add both to the beetroot.

3. Core the apple and thin slice or julienne, then add to the beetroot mixture. Add the rest of the ingredients to the salad and toss lightly.

4. Dressing Mix all the ingredients well and pour over the salad. Mix through lightly. Arrange the salad on a serving platter.

5. Haloumi: Cube the haloumi. Heat the butter in a pan and fry the cheese until golden brown. Sprinkle the cheese over the salad and serve immediately.
