Barbecued fish in a newspaper

  • 2
    yellow tail fish, cleaned and butterflied
  • 1
    bunch of coriander
  • 4
    cloves garlic
  • 5
    piece of ginger
  • 1
    fresh red chilli
  • 2
  • 1
    green pepper, sliced
  • 1
    red onion, sliced
  • salt and freshly ground black pepper
  • olive oil



Rinse fish under cold water and pat dry.

Place coriander in a pestle and mortar.

Peel and slice the garlic and ginger.

Add to the coriander with the chilli and bash.

Line a double sheet of newspaper with greaseproof paper.

Slice 1 lemon, place a line of the slices in the middle of each newspaper.

Lay fish on top and stuff the cavity with the herb mixture, green pepper and onion.

Season with salt and pepper and drizzle with oil.

Top with more lemon slices and drizzle with oil and salt.

Wrap up the newspaper and tie with a string.

Dunk both parcels in water and leave to soak for 10 minutes.

Place the fish parcels on a baking tray and on the braai, cook on medium heat, for 30 minutes. Remove fish from paper and top with coriander leaves and lemon.

Serve with grilled corn and chakalaka.
