Baked ginger and pear puddings

Ingredients

    brown sugar

    castor sugar
  • 2
    eggs
  • 15
    ml
    grated ginger
  • 120
    g
    self-raising flour
  • 2
    small pears, peeled and finely diced
  • 50
    g
    brown sugar
  • 180
    ml
    cream
 

Method

 

Preheat oven to 170°C. Grease 6 x 150ml moulds.

Cream butter and sugars until light and fluffy.

Add eggs one at a time, beat in well, add ginger and mix well.

Fold in flour and add the diced pears, mix well.

Spoon mixture into moulds, filling to three-quarters.

Place in oven and bake for 20 minutes.

Remove and cool slightly before removing from moulds.

To make the sauce; in a small pot combine sugar and cream.

Slowly bring to a boil and cook for 2 minutes.

Spoon over upturned cakes.

Serve puddings warm.
