Avocado stuffed chicken rolls

Ingredients

    chicken breast fillets, pounded flat
  • 2
    ripe fresh avocados, pitted, peeled and diced
  • 1
    clove garlic, crushed
  • 250
    ml
    cherry tomatoes, halved
  • ½ red onion, finely chopped
  • chopped fresh basil leaves
  • 45
    ml
    lime juice
  • 10
    ml
    grated lime zest
  • Salt and freshly ground black pepper, to taste
 

Method

 

Preheat the oven to 180°C.

Place the chicken breasts on a flat working surface.

Mix the avocados, garlic, tomatoes, onion, basil leaves, lime juice, lime zest, salt and pepper.

Reserve half of the mixture.

Divide the remaining half onto the chicken breasts.

Roll up the breasts, tucking in the ends.

Secure with a toothpick if desired.

Place in a lightly oiled baking dish.

Rub chicken rolls with salt and pepper, and drizzle with a bit of oil.

Bake in the oven for about 30 minutes or until the chicken is cooked through.

Remove from the oven, cut into halves or thick slices.

Place on a platter with the reserved avocado mixture and vegetables in season.

To flatten the chicken breasts: place on a working surface, cover with baking paper or cling wrap and pound flat using a meat mallet or a rolling pin.
