Apple cheesecake

  • BASE
  • 60
    ml
    honey, slightly warmed
  • grated zest of 1 lemon
  • OR 5
    ml
    ground cinnamon
  • 2
    Pink Lady apples cored and thinly sliced
  • CHEESECAKE
  • 125
    ml
    full-cream plain yoghurt
  • 460
    g
    full-cream plain yoghurt
  • 5
    ml
    vanilla essence
  • 60
    ml
    honey
  • 3
    eggs
  • 30
    ml
    cornflour
  • TO SERVE
  • a few apple slices fried in butter honey
 

Method

40-60 minutes
 

Preheat the oven to 160 °C. Grease a loaf tin or springform tin 20 cm in diameter.

1. Base Mix the honey and lemon zest or cinnamon and pour into the tin. Tilt until the whole base is covered. Arrange the apple slices in the tin.

2. Cheesecake Mix the ingredients and pour carefully over the  apple slices.

3. Bake for 40-60 minutes or until the cheesecake has just set but is still wobbly in the middle. Allow to cool in the oven. Place in the fridge overnight if you like.

4. To serve Turn out on a platter and arrange the fried apple on top. Drizzle with honey.
