Ingredients

    chicken, cut into portions
  • Juice of 2 limes

    ground coriander
  • 5
    ml
    ground cumin
  • 45
    ml
    sunflower oil
  • 2
    onions, chopped
  • 4
    cloves garlic, crushed
  • 2,5
    cm
    piece ginger, grated
  • 5
    ml
    garam masala
  • 45
    ml
    chopped mint
  • 45
    ml
    chopped fresh coriander
  • Salt and freshly ground black pepper
  • A few strands of saffron, optional
  • 125
    ml
    cream
  • 15
    ml
    ghee or butter
  • Lime wedges to serve
 

Method

 

Place chicken in a heavy based saucepan.

Pour lime juice over chicken and allow it to marinate.

Add ground spices and set aside for 10 minutes.

Heat oil and sauté onions, garlic and ginger until transparent.

Add garam masala, mint, coriander, salt and freshly ground black pepper.

Spread the mixture evenly over the chicken.

Pour in cream and ghee.

Cover and cook over medium heat until the chicken is tender.

No water is to be added.
