375.00 ml castor sugar
500.00 ml flour — self-raising
300.00 g butter
4.00 eggs — extra-large
2.00 lemon — juice only
250.00 ml white sugar

Method:

Preheat the oven to 180 ºC and butter a large oven pan or spray with non-stick spray. Line with aluminium foil and spray this with non-stick spray as well.
Mix the castor sugar and self-raising flour together. Rub in the butter until the mixture resembles coarse breadcrumbs.
Beat the eggs and add, mixing to form a batter.
Turn the batter into the pan and bake for 30 minutes until it just begins to change colour.
Meanwhile, heat the lemon juice and sugar over low heat until the sugar has dissolved. Bring to boil and remove from heat.
Pour the syrup over the cake as soon as it comes out of the oven.
Allow to cool slightly and sprinkle a little coconut on top.
Allow to cool completely before cutting into triangles.
