Lemon stars

    cake flour
  • 100
    castor sugar
  • 1
    small lemon, juice and grated rind
  • 100
    icing sugar


1. Rub the butter into the flour until mixture resembles fine breadcrumbs. 2. Stir in sugar and knead to form a smooth, soft dough. Chill for 30 minutes. 3. Preheat oven to 180 ºC. Roll out dough on a lightly floured surface to about 6 mm thick. Cut out star shapes. Space well apart on greased baking trays and bake in preheated oven for 10 to 15 minutes until pale golden. Cool on a wire rack. 4. Once cooled, mix slightly warmed lemon juice and rind to the sifted icing sugar to form a glacé icing. Ice the stars.
