12.00 calamari — tubes and tenticles
85.00 ml lemon juice
15.00 ml fresh chillies — 573
2.00 garlic — cloves, crushed
15.00 ml fresh lemon thyme — finely chopped
5.00 ml sea salt
black pepper — freshly ground

Method:

Cut a few slashes in the calamari with the tip of a sharp knife. Mix lemon juice, olive oil garlic, thyme, salt and pepper and pour over calamari. Refrigerate for at least half an hour. Preheat a grill pan, then fry calamari over high heat for about 20-30 seconds on each side. Serve with salad greens and parsnip chips.
Serves 6.
