Ingredients (9)

CRUST
200.00 g ginger biscuits — crushed
60.00 ml butter — melted
5.00 ml cinnamon — ground
FILLING
2.00 nestlé sweetened condensed milk
250.00 ml lemon juice
1.00 lemon — zest only
4.00 eggs — seperated
70.00 g coconut
150.00 g castor sugar

Method:

1. Mix butter and cinnamon into finely crushed biscuits. Press into a 28 cm pie dish.
2. Mix together condensed milk, lemon juice and rind, egg yolks, coconut and 100 g of the sugar. Pour into prepared dish.
3. Whisk egg whites until soft peaks form, fold in remaining sugar and spread over filling. Sprinkle a little coconut over the top.
4. Bake for 20 to 25 minutes at 180 ºC.
