Lemon chicken with pasta

  • 2
    chicken breasts, skin removed
  • 1
    onion, cut into wedges
  • 1
    bay leaf
  • fresh basil leaves
  • 1
    lemon, juice and finely grated rind
  • 175
    pasta ribbons
  • 125
    frozen peas
  • 60
    smooth, fat-free cottage cheese
  • salt and freshly ground black pepper


Place the chicken, onion, bay leaf, a few basil leaves and lemon rind in a saucepan.
Pour over enough boiling water to cover the chicken, cover the pan and simmer for 8 minutes or until the chicken is done.
Remove from the heat, drain well and cut the chicken into bite-size pieces.
Cook the pasta according to the pack instructions and add the peas just before the pasta is done.
Drain well, then return everything to the pan, stir in the cottage cheese and season to taste with the lemon juice, salt and freshly ground black pepper.
Garnish with extra basil and serve immediately.
