Lemon chicken with garlic and potatoes

Ingredients (8)

12.00 chicken — pieces
1.00 lemon — zest and juice
salt and freshly ground black pepper
30.00 ml fresh thyme — chopped
900.00 g baby potatoes — scrubbed clean
1.00 lemon — sliced
12.00 garlic — cloves, unpeeled
150.00 ml fresh chillies — 573

Method:

Preheat the oven to 180 ºC and lightly brush an ovenproof dish with oil.
Season the chicken generously with salt and pepper, place in the dish and
sprinkle with the lemon rind, juice and thyme.
Gently beat each baby potato with a rolling pin to crack it slightly and add to the chicken pieces. Intersperse the chicken pieces and potatoes with lemon slices and garlic and drizzle with the olive oil.
Bake for about 45 minutes until cooked and golden brown. Stir occasionally to prevent the bottom pieces from burning.
Serve with bread and a salad.
