Lemon and gin refresher

  • 5
    grated rind and juice of lemons
  • 125
    castor sugar
  • 600
  • half bottle gin
  • crushed ice


Heat the lemon juice and rind sugar and water over medium heat until the sugar has dissolved. Simmer gently for 10 minutes and strain through a sieve. Cool and mix the gin with plenty of ice. Add the lemon syrup and serve immediately. Serves 6.
