Ingredients (10)

250.00 ml butter — softened
90.00 g cream cheese
250.00 ml white sugar
1.00 eggs — extra-large, yolk only
3.00 ml lemon — essence
5.00 ml lemon — zest only
625.00 ml flour — cake
2.00 ml salt
250.00 ml icing sugar — sifted
1.00 lemon — zest and juice

Method:

Preheat the oven to 180 ºC and butter a few baking sheets or spray with non-stick spray.
Cream the butter, cream cheese and sugar together until light and fluffy.
Add the egg yolk, lemon essence and lemon rind, beating until light.
Sift the cake flour and salt together and add to the butter mixture.
Mix to form a dough. Cut out cookies using a cookie cutter with a flower shaped nozzle.
Arrange the cookies on the baking sheets and bake for 7 to 10 minutes or until they just begin to change colour.
Make a spreadable icing using the icing sugar, and lemon juice and rind.
Sandwich the cooled cookies together with the icing and leave to harden before storing in airtight containers.
