2.00 kg pork — leg
salt
250.00 ml apple juice
15.00 ml soy sauce
1.00 garlic — cloves, crushed
2.00 ml ginger — ground
30.00 ml honey
cornflour

Method:

Preheat the oven to 160 ºC (325 ºF). Prepare the leg of pork by removing the skin and cutting a diamond pattern on a fatty side. Rub with salt and place in an ovenproof dish. Make a sauce with the apple juice, soy sauce, garlic, ginger and honey. Brush the meat generously with the sauce. Cover with tin foil and oven roast until tender and cooked through. Baste every now and then with the sauce. Thicken the remaining sauce with a little cornflour mixed with water, and brush the fatty side of the meat. Grill, fatty side up, until the fat is crisp. Do not overdo or the meat will dry out. Serve the leg of pork with the remaining sauce.
