200.00 g instant mashed potato
butter — a knob
5.00 ml mustard — powder
5.00 ml fresh basil
250.00 ml mince — leftover
3.00 eggs
fresh parsley — chopped, to garnish

Method:

Preheat the oven to 180 ºC (350 ºF). Grease an ovenproof dish.
Mix the mashed potato and butter and season with mustard powder and basil. Spoon into the prepared dish and spread evenly. Make eight hollows in the potato with the back of a spoon and spoon a little mince into five of the hollows. Break an egg into each of the remaining hollows. Sprinkle with a little Cheddar cheese, if preferred, and bake for about 20 minutes or till the eggs are done. Sprinkle with chopped parsley and serve with tomato sauce.
Serves 4-6.
