Leftover lamb sandwich

Chunks of wonderful lamb with a sassy minty mayo.

Ingredients (9)

12 lamb — slices
8 Tbs mayonnaise
2 garlic — cloves
6 chopped
salt and freshly ground black pepper
1 rocket
1 red onion
4 bread — crusty French rolls, to serve
butter

Method:

Mayo
Crush the garlic, finely chop the mint and add both to the mayo. Season and mix well.
Rolls
Set the oven to grill and butter the rolls.
Place under the grill for a minute or 2 until slightly crisp.
Lamb
Slice the leftover lamb, place on plate and pop in the microwave for 1 minute to warm through.
To assemble the rolls
Cover the bases with leaves, place on the warm lamb.
Thinly slice the red onion and place on top.
Spoon on some mayo and enjoy.
