Ingredients (10)

400.00 g puff pastry — defrosted
FILLING
250.00 g bacon — finely chopped
700.00 g leeks — or onions, sliced
3.00 apples — green, peeled, cored and thinly sliced
15.00 ml lemon juice
50.00 g fresh chives — bunch, finely chopped
500.00 ml milk
5.00 eggs — extra-large
2.00 ml nutmeg — ground
sea salt and freshly ground black pepper

Method:

Preheat the oven to 200 ºC (400 ºF) . Spray a deep 30 x 24 cm ovenproof dish with non-stick spray. On a lightly floured surface, roll out the pastry and line the dish. Neatly trim the edges with a sharp knife and prick a few holes in the crust.
Fry the bacon until done. Remove from the pan. Sauté the leeks or onions in the pan fat until softened and add the apple and lemon juice. Stir-fry for a few minutes. Add the chives and bacon and mix. Spoon into the prepared crust. Blend the milk, eggs and nutmeg, season well with salt and pepper and whisk. Pour over the leek or onion mixture and bake for 40-45 minutes until the filling is set. Serve hot.
Makes 8-10 portions.
