Leek, Parmesan and bacon salad

Ingredients (7)

12.00 leeks — baby, washed and trimmed
12.00 bacon — rindless rashers
30.00 ml fresh chillies — 573
150.00 g parmesan cheese — grated
200.00 g lettuce
30.00 ml vinegar — balsamic
salt and freshly ground black pepper

Method:

Heat grill until hot. Place leeks and bacon on a baking sheet, drizzle with 15 ml (1 tbsp) oil and grill for 8 minutes, turning occasionally. Set aside.
Place greaseproof paper on a baking sheet and spoon Parmesan cheese into small, flat rounds. Grill for 4 minutes, or until golden. Cool, then carefully peel off paper.
Toss salad leaves with remaining oil, vinegar, salt and pepper and divide among 6 side plates. Place leeks (tied in a knot for a pretty finish), bacon and Parmesan wafers on top.
