Leek, Parmesan and bacon salad

    baby leeks, washed and trimmed

    bacon rashers, rinds removed
  • 30
    olive oil

    Parmesan cheese, grated
  • 200
    salad leaves
  • 30
    balsamic vinegar
  • salt and milled black pepper


Heat grill until hot. Place leeks and bacon on a baking sheet, drizzle with 15 ml (1 tbsp) oil and grill for 8 minutes, turning occasionally. Set aside. Place greaseproof paper on a baking sheet and spoon Parmesan cheese into small, flat rounds. Grill for 4 minutes, or until golden. Cool, then carefully peel off paper. Toss salad leaves with remaining oil, vinegar, salt and pepper and divide among 6 side plates. Place leeks (tied in a knot for a pretty finish), bacon and Parmesan wafers on top.
