Ingredients (11)

1.00 Litres water
250.00 ml maize meal
1.00 0 garlic — cloves, crushed
2.00 0 fresh chillies — deseeded, chopped
4.00 0 tomatoes — peeled, chopped
125.00 g button mushrooms — sliced
4.00 0 baby marrows
5.00 ml mixed herbs
45.00 ml oil
1.00 0 onion — chopped
0.00 0 salt and freshly ground black pepper

Method:

Bring water to boil. Mix mealie meal with some cold water to form a paste.
Stir into boiling water. Using a wooden spoon, stir until mixture is well blended, but still soft.
Cover and cook over gentle heat for 20 minutes, stirring occasionally. The mixture should be slightly stiffer than soft breakfast porridge.
Meanwhile, prepare the sauce: heat the oil and sauté onion, garlic and chillies until soft. Add tomatoes, baby marrows and mushrooms. Season with herbs, salt and pepper, and cook for 15 minutes.
Spoon half the mealie-meal mixture into an ovenproof dish. Spoon half the sauce over this and top with remainig mealie-meal.
Cover with remainig sauce, sprinkle with grated cheese and cook in oven for 15 minutes. Brown top under grill if desired. Serve warm.
