4.00 lamb
100.00 g flour
100.00 ml olyfolie
1.00 tomatoes — chopped
1.00 red pepper — sliced
2.00 carrots — sliced
2.00 celery stalks — chopped
1.00 onion — sliced
3.00 garlic
500.00 ml wine — red
2.00 bay leaves
3.00 fresh oregano
500.00 ml stock — vegetable

Method:

p>Verhit jou oond tot 160 grade C. Plaas tamaties, soetrissie, wortels, seldery, ui en knoffel in jou voedselverwerker en kap baie fyn. (As jy nie ‘n voedselverwerker het nie, sal jy al die groente
self moet fynkap.)

Rol die lamskenkels in die meel en skud die oortollige meel af. Verhit die olyfolie in ‘n groot kastrol en braai die skenkels tot mooi bruin. Voeg die fyngekapte groente, rooiwyn, lourierblare, origanum en aftreksel by die skenkels.

Geur met sout en varsgemaalde swartpeper en maak toe met ‘n deksel. Kook vir minstens 3 tot 4 ure tot die vleis feitlik van die been af val. Jy kan ook die deksel van die kastrol afhaal vir die laaste uur as die sous te veel is.
