20.00 lamb — tails
salt
freshly ground black pepper
DUMPLINGS
240.00 g flour — cake
20.00 ml Baking powder
2.00 ml salt
30.00 ml butter
180.00 ml milk

Method:

Place the lambs’ tails in a heavy-based saucepan and season to taste with salt and pepper. Cover with hot water. Simmer until the tails are nearly done. Sift the dry ingredients together. Rub in the butter until well blended. Add the milk and mix. Drop teaspoonfuls of the mixture on top of the lambs’ tails, cover and simmer with the tails until the dumplings are done.
Serves 4.
