Ingredients (11)

450.00 g lamb — strips
60.00 ml cornflour
30.00 ml fresh chillies — 573
2.00 garlic — cloves, crushed
3.00 leeks — thinly sliced
8.00 green beans — quartered
4.00 courgettes — julienned
90.00 ml yoghurt
45.00 ml mint sauce
fresh mint — to garnish
rice — fragrant Thai, to serve

Method:

Coat lamb in cornflour.
In a wok or heavy pan, heat the oil. Add the garlic and meat. Stir-fry for 4 to 5 minutes.
Add the leeks and cook for 2 minutes. Add the beans and courgettes. Cook for further 2 minutes and remove the pan from the heat.
Combine the yoghurt and mint sauce. Stir into the meat and vegetables and reheat gently.
Serve on Thai fragrant rice.
