Lamb shanks with caramelised onions

  • 6
    (1 per person) lamb shanks
  • few sprigs fresh rosemary
  • 100
    olive oil
  • 60
    balsamic vinegar
  • 3
    chopped shallots
  • freshly ground black pepper
  • salt


Place the meat and a few sprigs of fresh rosemary in water and bring to the boil.
Simmer for about 1 hour or until tender.(Do not add any salt as this will cause the meat to become tough.)
Brown the shanks over the coals.
Mix the remaining ingredients and use to baste the shanks while braaiing.
