Ingredients (14)

800.00 g lamb — minced leg
1.00 onion — finely chopped
2.00 Tablespoons fresh chillies — 573
2.00 Tablespoons butter
1.00 red chilli — small, deseeded and finely chopped
2.00 tsp coriander — ground
2.00 tsp cumin — ground
1.00 Tablespoons Worcestershire sauce
2.00 Tablespoons sweet soy sauce
2.00 Tablespoons chutney
1.00 sprig marjoram — finely chopped
1.00 sprig fresh thyme — finely chopped
1.00 tsp salt
1.00 tsp freshly ground black pepper

Method:

Heat a frying pan, add the olive oil first and then the butter. Saute the onion until lightly caramelised. Strain off the oil and butter, return the onion to the pan and add the chilli, coriander and cumin. Saute for 1 minute, add the worchestershire sauce, ketjap manis, chutney and herbs. Season with the salt and pepper. Remove from heat and leave to cool. Mix the cooled spiced onion mixture into the lamb mince and shape into four burgers.
To Serve
Heat a little olive oil in a frying pan. Fry the burgers for 2 minutes on each side. Finish off in the oven at 200C until cooked to your liking.
