Lagoa das Furnas casserole

  • 1
    shoulder of beef, cut into large portions
  • 1
    pork leg or blade bone, cut into large portions
  • 1
    chicken, cut into large portions
  • 2
    large chouricos de carne (smoked Portuguese sausages), cut into equal-sized pieces
  • 250
    slab smoked bacon, cut into equal-sized pieces
  • 8
    medium potatoes, peeled and quartered
  • 8
    carrots, peeled and cut lengthways
  • 4
    turnips, quartered
  • 1
    large white cabbage, quartered
  • coarse salt


Layer meats, sausages, bacon and vegetables in 2 large casserole dishes, sprinkling each layer with a little coarse salt.
Cover tightly with aluminium foil (shiny side in) and a lid and bake at 160 ºC for 2-2 1/2 hours, or until meats are tender.
