125.00 g butter — softened
30.00 ml castor sugar
2.00 ml vanilla — essence
120.00 g flour — sifted
120.00 g ground pistachio nuts — ground in blender
icing sugar — to garnish

Method:

Preheat oven to 160 ºC.
Place butter, castor sugar and vanilla essence in a food processor and process until creamy. Add flour and process until well blended.
Transfer to a bowl, add nuts and mix well. Shape mixture into small balls, place on a greased baking sheet and bake for 20 to 25 minutes.
Roll in icing sugar while still hot and cool on a wire rack. Garnish with extra chopped nuts.
