Kourabides (Pistachio melting moments)

    butter, softened
  • 30
    castor sugar
  • 2
    vanilla essence
  • 120
    flour, sifted
  • 120
    pistachio nuts, ground finely in a blender
  • icing sugar for dusting and extra nuts for garnishing

Preheat oven to 160 ºC. Place butter, castor sugar and vanilla essence in a food processor and process until creamy. Add flour and process until well blended. Transfer to a bowl, add nuts and mix well. Shape mixture into small balls, place on a greased baking sheet and bake for 20 to 25 minutes. Roll in icing sugar while still hot and cool on a wire rack. Garnish with extra chopped nuts.
