Kidneys in brown gravy

  • 1
    large onion, sliced
  • oil
  • 8
    sheep's kidneys, membranes and cores removed
  • cake flour
  • 2
    chicken stock cubes
  • 375
    boiling water


Sauté the onion in heated oil until soft. Slice the kidneys thinly and roll in the cake flour. Add kidneys to the onion and fry lightly. Dissolve the chicken stock cubes in the boiling water and add to the kidneys and onion. Simmer slowly until a thick brown gravy is formed. Stir frequently to prevent the mixture from sticking to the bottom of the pan.
