Kidney treat

    sheep's kidneys
  • lemon juice
  • salt and pepper

    onion, finely chopped
  • 400
    whole tomatoes, seeded and mashed
  • sugar
  • basil
  • 8
    slices of toast


Wash the kidneys thoroughly and remove the skin. Soak in salted water to which a little lemon juice has been added for about half an hour. Halve the kidneys and remove all the tubes. Season with salt and pepper. Heat the oil in a pan and fry the onion and kidney until nicely browned. Add the tomatoes, reduce the heat and simmer until the kidneys are tender. Season to taste with salt and pepper, sugar and basil. Serve on unbuttered toast.
